Charlie Collins is the owner and chef of Hotel Panamonte. He has been featured in many local and international publications for being one of the top chefs in Panama. Recently he has published two books. His dishes are influenced by local, indigenous and international flavors. Ingredients are fresh, as he even has his own herb garden on site.
